Minneapolis, Minnesota, November 18, 2021 – Startup Today has been selected as the winner of Scale It Up!, an innovative challenge designed to help plant protein start-ups accelerate their products to market. The challenge involved more than 130 people from 22 companies participating in a six-month competition. Today, it will continue to cooperate with the four challenge sponsors of Buhler, Cargill, Givaudan and PURIS to accelerate product development and expand production to produce plant protein substitutes that taste and texture similar to poultry.

It is now creating large, label-friendly, complete alternative proteins that resemble the taste, appearance and mouthfeel of poultry when rehydrated. Using sustainable pea protein and produced by dry extrusion, they have a shelf life of two years at ambient temperature in complete cuts like chicken, and are relatively expensive compared to similar poultry products.

As the first place, Todays will receive six-month mentorship from partner companies, with technical expertise and access to state-of-the-art testing facilities for more than $100,000.

Plant Ranch was selected as runner-up for its Mexican-inspired sustainable plant protein series. They will receive three months of mentorship from the partner company of their choice.
